Quick, easy, light. Hot summer days require nutritious minimal food. For the first day of the #20SimpleDays I repost a mediterranean recipe from the greek site Savoir Ville, as edited by Maria Prassa. You ''ll love it !

The Ingredients
1/2 cup of flour
1/4 teaspoon baking powder
a pinch of salt
15 black olives
1 clove of garlic, chopped
6-8 chopped mint leaves
4 teaspoons virgin olive oil
3 eggs
50 grams feta cheese crumbled by hand
The Instructions
Preheat the oven to 175 degrees. In a bowl, mix the flour and baking powder. In another bowl, mix the salt with the chopped olives, garlic and mint. In a third bowl, beat the eggs with olive oil until you have an homogenous mix. Add the chopped ingredients and stir well. Add the flour and stir until all the ingredients together. Add the crumbled feta cheese and pour the mix in leotards, or into cups for cupcakes. Bake the muffins for about 20 minutes or until they are browned.
